1.   PUMPKIN FRITTERS
2 cups cooked pumpkin                                   1 egg
2 teaspoons baking powder                              4 tablespoons flour
Beat the egg end add to the other ingredients.  The exact amount of flour will depend on the moisture in the pumpkin, but this is a guide.  Fry in hot flat till brown on both sides.

2.   BAKED POTATOES WITH DIFFERENCE
Wash potatoes.  Bake in oven190ºC until soft.  Cut in half lengthwise.  Scoop out flesh and wash with milk, butter, salt and pepper.  Fill potato cases with this mixture.  Grate ½ cup cheese over potatoes and place under grill for 10 min before serving.
